Our Story


With over 40 years experience in the hospitality industry, training at the original ‘Mignons’ in Double Bay, Owner and Pastry Chef of ‘Encore Patisserie Cafe’ Barry Symington is committed and dedicated to his profession. After successfully running ‘La Promenade’ for 18 years, Barry’s next step proved just as successful with the opening of ‘Encore Patisserie Cafe’ in October 2006. Encore has been a huge hit with the locals in the St George area looking for great coffee, french delicacies and that something special for any occasion. Barry and his team at Encore will leave you wanting to come back for more.


Hi, my name is Barry Symington. I fell in love with patisserie at an early age and realized, i could make people happy through my food. I began my journey in my teens where i was very fortunate to be apprenticed under 5 great chefs from all over the world. A french patisseier, Jean Marie Apert, inspired me the most taking pastry to a different level, his knowledge and love of patisserie was incredible.

From there i travelled all over Australia learning my trade. Then i was ready to open my first patisserie in Peregian Beach QLD, which was great success and i had the pleasure to work with an Italian head chef from the Sydney Hilton in Sydney Carlo Bon Veinge. The next patisserie was an even bigger success, La Promenade Patisserie in Sans Souci, Australia, which i operated for nearly 20 years. Before moving to my current location, Encore Patisserie Cafe, South Hurstville.

This patisserie is also a great success and has been recognized for our quality products and customer service twice winning cake / bakery of the year and business of the year.
